A few weeks ago, I made a batch of hot sausages and sauce for a weekend trip to the mountains. It was an easy recipe to put together for a group of friends to make sandwiches with and then to have on another day with pasta. I love dishes that you can throw a mix of ingredients together and bake in the oven. Another idea was to have the sausages heated up and served with eggs for breakfast!
I bought 10 sausage links (mild) and sautéed them on the stove in a tablespoon of olive and vegetable oil. I wanted the links to be slightly crispy on the outside and finish cooking in the oven.
In a large pan, I combined 2 onions (sliced), 2 green peppers (sliced), 1 large can of tomato paste, 2 large cans of tomato sauce, 1 tbsp parsley, 1/2 tsp baking soda, salt, pepper, 1 large can of mushrooms and then added the sausage and grease into the mix. I added a pinch of garlic salt and 1/2 tsp of red pepper flakes on top of the sausage links and baked at 350 degrees for 2 hours. Stirred occasionally.
I bought hoagie buns from the bakery and a block of extra sharp cheddar cheese to grate for the top. To make this sandwich even better, butter your favorite bread or bun, toast in the oven, pile on the sausage links, sauce, cheese and broil until you get a combination of crispy and gooey! Yummy!
We had plans last Friday to go out to dinner and hit up our favorite Chinese restaurant, Dragon Palace, but that all changed when a thunderstorm hit our area. The weather was so bad that it called for dinner in! Sooo...I made a heavy but delicious meal of rib eye steaks, buttered onions, and French fries. It was fattening and delicious! Enjoy these quick and easy recipes!
I seasoned two rib eye steaks with garlic salt, pepper, and McCormick Steak Seasoning. I added a dribble of olive oil and a pat of butter into an iron skillet and cooked to our liking. Thomas likes medium rare and I like medium well.
I sliced and seasoned an onion with garlic salt, pepper, parsley, a pinch of paprika and cooked in butter over medium heat. I let the onions get crispy on the edges.
I sliced potatoes into French fries and seasoned them with garlic salt, pepper, and paprika. I drizzled some olive oil, gave them a little toss and baked in the oven at 365 degrees for 20 minutes. Note: Sponge out the moisture from the potato so they bake faster and more even.
I then added the onions to our French fries, poured each of us a glass of wine and enjoyed the meal. You could make this meal the healthy way by baking everything but it's fun to splurge every once in awhile :-)
