Thomas and I were really trying to be good and eat healthy over the weekend. Let's just say we failed miserably when I got the craving for something fried. I had never baked then fried onion rings nor have I let them marinate in milk but they turned out delicious. Check out this recipe and try it for yourself. It's so easy and delicious.
2 sweet onions sliced. Let sit in a bowl of milk while preparing the batter. I used skim milk and used just enough to make sure the onions were covered.
2 eggs whipped together in another bowl
Combine in another bowl:
1 cup white flour
1/4 tsp garlic salt
1/2 tsp garlic powder
1/2 tsp dried parsley
1/4 tsp smoked paprika
1/4 tsp black pepper
Take the milk soaked onions, dip into egg mixture and then flour mixture and place into the oven to bake at 350 degrees for 15 - 20 minutes. I sprayed my baking pan with PAM cooking spray Butter flavored. While the onions are baking, melt in a pan (I used an iron skillet) 1 cup of Canola Oil and 1/2 stick of butter. I used Land O' Lakes salted butter. Placed the baked onions a few at a time into the hot oil and cook until crispy or to your liking. I placed the onions on a plate covered with Scott Towels to absorb some of the oil before placing on our plates. I then lightly sprinkled some Pure Pink Himalayan Salt over the onions to add more saltiness.
1 cup Hellman's Mayo
1/2 cup Heinz Ketchup
2 tablespoons of Philadelphia Cream Cheese
1 pinch of garlic salt
1 pinch of smoked paprika
Whip together until creamy.
Note: I used a fork to pick up the onions and a spoon to cover the onions to avoid my fingers getting sticky from the egg and flour.
