What do you do with two leftover portobello mushrooms that are going to go bad if you don't use them?...you pile them high with shredded mozzarella cheese, cherry tomatoes, and vinaigrette dressing!
I took a small pack of cherry tomatoes and threw a combination of oregano, garlic salt, pepper, and olive oil and tossed it all together. I then piled the middle of the mushrooms with my tomatoes and mozzarella cheese mixture.
I had two tablespoons of Lite Ken's Steak House Balsamic Vinaigrette and 1 tablespoons of Lite Ken's Steak House Raspberry Walnut Vinaigrette dressing and marinade that I mixed together and drizzled on top of the shrooms. I baked at 350 degrees for approximately 20 - 30 minutes. I normally know when they are done by looking at them. Some like their mushrooms to be tougher but we like ours to look and taste sautéed.
There you go...a quick and easy recipe for a side dish or even a meal depending on how hungry you are!
